Unique dumplings with an array of different cheese.
Ingredients for 4 people: 200 g canederli bread, 120 g cheese, ½ onion, 3 eggs, 20g butter, chives, ca. 100ml milk, 1 tbs flour, salt, pepper
Preparation: Brown the finely chopped onions together with butter, add canederli bread, cheese (cut into squares) and the browned onions. Mix eggs and milk and mix into, together with the chives, the bread. Add salt and pepper, mix well, add flour. Knead until you obtain a silky and elastic mixture.
Place to the side for 15 minutes. Wet your hands and start forming the dumplings, rolling the mixture between your palms. Plunk in salted, boiling water for 10 minutes. Drizzle the gnocchi with parmesan, melted cheese and chopped chives.
