Stafell Hut Topfenstrudel

Easy to make and simply divine. The real treat can be expected at the Stafell Hut.

Topfenstrudel (10 portions)

500g flour, 350g butter, 500g sugar, 4 eggs, ½  yeast, 2 vanilla sugar, salt, 500g Topfen, lemon peel, rum

Dough preparation:
Mix 250g flour, 250g sugar, butter, 1 vanilla sugar, a bit of salt and yeast on the working surface. Add two eggs and with your hands, quickly mix the dough.

Preparation of the filling:
Mix 100g butter, 2 yolks, some rum, lemon peel, 1 vanilla sugar to form a soft mixture and add 1/2 squeezed lemon and the topfen. Whisk two egg whites into stiff peaks and slowly add them to the dough.

Unroll the dough and flatten it out, add the filling, roll the dough and bake for 40-50 minutes at 180 degrees.
