Speck canederli at the Picco Ivigna Hut

The speck canederli are probably the most well known version of the canederli.

Ingredients for 4 people:
250 g old, white bread, 150 g South Tyrolean speck. 2 eggs, 1/4 l milk, 1 tbs of finely chopped onion, some butter, 2 tbs of finely chopped parsley, 1 tbs of finely chopped chives, 2 tbs flour.

Cut the bread into ½ cm cubes, add to a bowl and wet with milk. Cut the speck into 2-3 mm-big cubes and add to the bread. Roast the chopped onion and mix with the parsley, chives and the eggs with the bread. Add flour, mix well and leave to rest in a dry place. Use your hands to form small canederli and boil for 15 minutes in salted water.
