Kaiserschmarrn has to be soft. At the Senn am Egg guesthouse the egg is mixed very slowly: this is what makes the difference.
Ingredients for 1 person: 2 tbs flour, 3 eggs, pinch of salt, 200ml milk, soft butter, homemade marmalade or jam, icing sugar
Preparation: mix flour, salt, milk and yolks. Slowly add whisked egg whites. Add the dough in the pan with the butter, slowly flip it over and leave until golden, then cut it up. Add icing sugar and serve with marmalade or jam.
