Senn am Egg Hut cheese canederli

Spinach or mushroom canederli also available. If you have a strong flavoured cheese in your pantry? This is the recipe to use it.

Ingredients for 4 people:
350g old bread, 200 ml milk, 250gr cheese, freshly chopped parsley, 1 big onion, salt and pepper, butter, 6 eggs, 2 tbs flour

Add salt and pepper to the bread, moistening it with milk. Chop the onion and brown it in butter. Add parsley, cheese, onion, eggs to the bread and mix well. Add flour and, if dough is too dry, add milk. Dip your hands into a bowl of cold water, and start forming canederli using your hands. Once all canederli have been prepared, add to boiling water and boil between 10 and 150 minutes, depending on their size. Before serving the canederli, drizzle with parmesan, melted cheese and fresh chives.

You can also use spinach or mushrooms instead of cheese.

Serve with parmesan, melted cheese and chives.
