Potato dumplings stuffed with Good King Henry at the Mittagerhutte Hut
Nobody expects such a creative feat at 2300 m altitude: stuffed potato dumplings with Good King Henry and smoked ricotta.
Ingredients for 8 people: potato dough: 1kg potatoes, 1 egg, 250g flour, nutmeg, salt stuffing: 1000g Good King Henry, 600g smoked ricotta, 150g egg yolk, 200g grated parmesan, salt, pepper, nutmeg
Preparation: stuffing: parboil Good King Henry, finely chop with a knife and mix all other ingredients in. potato dough: peel the potatoes, slice them into cubes and boil for ca. 20 minutes in salted water, sieve and rest. Sieve the potatoes, mix them with the egg yolk and melted butter and set by side to cool off. Add flour, nutmeg and salt to the potato dough.
Finishing: with a rolling pin slowly roll out the dough and cut with a round (6-7cm diameter) mould. Add some stuffing to the centre of the cut out dough (with a teaspoon or a pastry bag), brush the edges with egg yolk and close. Boil in boiling water for 4 minutes. Serve with melted butter, parmesan flakes and Good King Henry flowers.
