Kaiserschmarrn at the Hochmuth Restaurant

The Hochmuth Restaurant serves an exquisite and light Kaiserschmarrn.

Ingredients for 4 people:
250 g flour, 375 ml milk, 8 eggs, a pinch of salt, butter, icing sugar                 

Preparation:
Pour the milk into a bowl, add the sieved flour and mix until you obtain a smooth mix.
Add the eggs one after the other and the pinch of salt. Place the dough to the side for a bit.

Place the pan on a low flame. Melt the butter and add the dough. Slowly brown and flip it over when the surface starts to solidify. Brown it on this side, too. At one point, fold it so that it rises quicker. Break up with your fork.

Serve and sprinkle with icing sugar and red berry marmalade or apple compote. Enjoy!
