Home-made ricotta dumplings.

At the Gompm alpine hut we make delicious dumplings with ricotta and ground hazelnuts.

Ingredients for 4 people:
20 g butter, 30 g sugar, 1 egg, 1 vanilla pod, lemon juice, 200 g ricotta (20% fat), 70 g breadcrumbs (for softer dumplings)

Mix the butter, sugar, egg, vanilla, and lemon juice to obtain a soft cream. Gradually add the ricotta, and then the breadcrumbs. Shape into dumplings and boil them in sweetened water for 10 minutes. Drain well.

Ground hazelnut mix:
50 g ground hazelnuts, 20 g breadcrumbs, 50 g sugar. Mix the hazelnuts, breadcrumbs, and sugar and place on a baking tray. Bake in a pre-heated oven at 160 degrees until golden brown. 

Cover the dumplings with the hazelnut mix.
