Ingredients for 4 people: 150 g old, white bread, 75 g butter, 1/8 l milk, salt, nutmeg, 180 g durum-wheat semolina, 3 eggs, chopped herbs
Preparation: Cut the old, white bread into cubes, melt the butter in a pan and roast the bread. Warm the milk in a small pot, add the semolina and boil until you obtain a dense mix. Add the eggs one after the other.
Mix the semolina with the bread and herbs. Let the dough rest for a bit and then use your hands to form small canederli and boil in salted water for about 20 minutes.
The finishing touch: Serve the canederli with fried onion rings and melted butter
