Chop the onions and brown them. Cut the cheese into cubes and add to the canederli bread together with the browned onions. Mix the eggs with milk and add them to the bread together with the chives. Add salt and pepper and thoroughly mix. Leave by the side for 30 minutes. Wet your hands and start forming the gnocchi adding flour. Boil for 10 minutes in a lot of salty water. Drizzle the gnocchi with parmesan, melted cheese and chives.
Serve with a cruncy lettuce salad or a cabbage salad with speck.
