Egg spätzle with mountain herbs from the Mahdalm mountain hut
The mountain egg spätzle are delicious.
Ingredients for 4 people:
400 g wheat flour, 100 g melted butter, salt, pepper, nutmeg, seasonal herbs (mint, thyme, chervil, marjoram, etc.) 120 g mountain cheese, 2 onions
Cut the onions in circles, sprinkle with chili and flour and fry in boiling oil
Prepare a mix with the wheat flour, eggs, a slice of butter, salt, pepper and nutmeg. Mix the dough until you obtain a smooth dough with no lumps. Use the ‘spätzlehobel’ to pour the dough in the boiling water. The spätzle are cooked as soon as they resurface. Sieve them.
Pour the spätzle in a pan and mix with the herbs and onions, serve and sprinkle with grated mountain cheese and fried onions.
