Chicory and onion-speck sauce pasta at the Steinrast hut

The main ingredient, chicory, grows on fields surrounding the Steinrast hut. It can’t get any more genuine than this!

gather 200g chicory leaves, wash them and boil them.

Ingredients for 4 people:

Pasta: 250 g semolina flour, 100g wheat flour, 1 egg, 1 olive oil tbs, 200 g chicory puree, salt

Onion-speck sauce: 1/2 chopped onion, 150 g finely chopped speck, meat broth, cream, salt, pepper, 2 chopped garlic cloves.

Mix all the ingredients until you obtain a smooth mix. Pass the mix through the pasta machine and make some tagliatelle and boil them in salted water. In the time being slightly fry the chopped onion, garlic and speck. Add the meat broth and let simmer for a bit. Add salt, pepper and cream to the sauce.

Sieve the pasta and add it to the pan with the sauce. Mix well. Serve the tagliatelle with parmesan flakes and chicory leaves.
