Mix all the ingredients until you obtain a smooth mix. Pass the mix through the pasta machine and make some tagliatelle and boil them in salted water. In the time being slightly fry the chopped onion, garlic and speck. Add the meat broth and let simmer for a bit. Add salt, pepper and cream to the sauce.
Sieve the pasta and add it to the pan with the sauce. Mix well. Serve the tagliatelle with parmesan flakes and chicory leaves.
