Cheese and nettle gnocchi at the Meraner Hut

Nettle and Good King Henry gnocchi with mountain cheese gnocchi: an exquisite combination.

Ingredients for 4 people:
250 g old, cut up bread, 4 eggs, 1/8 l milk, 1 onion, 100 g butter, 100 g mountain cheese, 60 g flour, nutmeg salt

Preparation – Cheese gnocchi:
Finely slice the bread. Mix eggs with milk and mix into the bread dough. Lightly fry the onion and leek in butter. Cut the cheese into cubes, add with flour to the dough of bread and mix well, add nutmeg and a pinch of salt. Shape the gnocchi and add them to a pot of boiling water. Boil them for about 15 minutes.

Preparation – Nettle gnocchi:
Same ingredients as the cheese gnocchi, but instead of cheese use 200 g of nettle and Good King Henry puree, add garlic, a bit of onion and a pinch of salt, pepper and nutmeg and mix well.

My tip:
Use good and tasty mountain cheese or "Graukäse" ricotta cheese. 
Nettles and Good King Henry are rich in vitamins, especially during spring: gather them during this season, boil them, sieve them and freeze them if necessary.
