Buchteln with vanilla sauce at the Pirchof hut

The Buchteln are marmalade-filled pastries and are a traditional South Tyrolean dessert.

Ingredients for 1 casserole:
500 g flour, salt, 28 g baking powder, about 1/8 l milk, 70 g sugar, 70 g butter, grated peel of ½ lemon, 2 eggs, 100 g butter, marmalade for the filling.

Preparation:
Sieve the flour in a bowl, add salt and use your hands to make a small hole in the middle. Add baking powder in the middle, add lukewarm milk and mix. Cover the bowl and place it in a warm place to rise. Mix the melted butter with the sugar, grated lemon peel and eggs, add the dough and mix well until the dough automatically does not stick tot he bowl. Cover the bowl and wait until the dough has increased to twice its current size. Use your hands to roll the dough into small balls and add the marmalade at the centre. Place them on a buttered casserole and bake for about 35 minutes at 200°.

Tip: 
Serve the buchteln with hot vanilla sauce and icing sugar.
