Buckwheat cake is a real South Tyrolean classic, loved by hikers and bikers.
Ingredients for 1 cake: 250g butter 150g sugar 6 eggs 100g sugar 250g ground almonds 250g buckwheat flour 1 sachet yeast 1 sachet vanilla sugar red berry jam for the filling
Preparation: Mix butter with the sugar and egg yolks until you obtain a creamy dough, then whisk the egg whites into stiff peaks with the remaining sugar. Mix the ground almonds with buckwheat flour, yeast and vanilla sugar. Slowly add to the egg yolk dough. Add the mix into a buttered cake form and bake at 180°C for 45 minutes in the preheated oven. Leave to the side to cool off, cut the cake horizontally and fill with red berry marmalade
