It’s the details that matter. Try the Talbauer restaurant’s apple strudel and find out yourself.
Ingredients for 1 strudel:
2 eggs, 1kg apples, ca. 100g sugar, grated lemon peel, ground nuts, 130g margarine or room temperature butter, a dash of cinnamon, 250g flour, ground cloves, 1 sachet vanilla sugar, a drop of rum, 1/2 sachet of yeast, lemon juice, raisins
Sieve the flour on a board, form a hole in its centre and add the ingredients to it. Knead all the ingredients until you obtain an even dough. Add flour if necessary. Set to stand for 30 minutes.
Peel the apples, cut them into thin stripes and place in a bowl. Add sugar to the apples (depending on flavour and type of apples), a dash of raisins, ground nuts, cinnamon, ground cloves, rum and lemon juice; mix well.
Use a rolling pin to roll out the dough on a flour-covered cloth, add the apples and roll the strudel with the cloth’s four sides. Place the strudel on a buttered baking tray or on baking foil and brush with whisked eggs. Bake at 180°C for 50 minutes.
